ORIGIN

Parsley is a herb originating from the Mediterranean Basin. Its scientific name is Petroselinum Crispum and it belongs to the Apiaceae family.

Parsley was first consumed over 5,000 years ago, mainly in southern Europe. It was grown by the Ancient Greeks and Romans, who thoroughly enjoyed it. In the Middle Ages, parsley was only used for therapeutic purposes. It was not used as a herb until the 15th century. It then started to become popular in cooking. The word ‘parsley’ only appeared in the 13th century.

Nowadays, this herb is popular all over the world for its taste, smell and medicinal properties.

CULTIVATION METHOD

Parsley is made up of striated stems and split green leaves.

This plant can reach a height of up to 80cm. It grows in deep and humus-rich soils. Parsley thrives in sunny or partially-shaded spots. It blooms from early June to late July. It can be harvested all year round.

HOW TO USE IT WHEN COOKING

Parsley, whether fresh, freeze-dried or dehydrated, is very popular in Mediterranean cuisine.

An ingredient in mixed herbs, it flavours stocks, sauces and stews. Parsley enhances the flavour of salads, meat and even vegetables. Mixed with butter and garlic, it makes parsley butter, which flavours shellfish stuffing, grilled fish and even snails.
