ORIGIN

Growing mainly in tropical regions, the chive plant originates from Asia. Its scientific name is Allium Schoenoprasum and it belongs to the Alliaceae family along with leek and onion. Chives, also known as ‘wild chives’ or ‘common chives’,

were grown over 5,000 years ago by the Chinese and used to fight some illnesses. Chives spread to Europe in the early 14th century after they were discovered by Marco Polo.

CULTIVATION METHOD

The main features of chives are their slender, hollow green leaves that form a clump. They grow in clay, chalky and mineral-rich soils and the plant measures 20-40cm in height. To grow properly, chives should be planted in a well-irrigated and sunny or ideally parly-shaded spot.

They bloom from June to August, when spherical purple umbels emerge. Chives are usually harvested from early April to late November.

HOW TO USE IT WHEN COOKING

Chives, especially freeze-dried chives, are widely used in European, Chinese and North American cuisine. They are also used in all kinds of dishes in French cuisine.

Chives go very well with salads, omelettes and potage, as well as fromage blanc-based mixes. Both fresh and freeze-dried chives are used.
