ORIGIN

Saffron originates from the Middle East. Its scientific name is Crocus Sativus L. Saffron is commonly known as ‘red gold’ (because it is one of the most expensive spices) or ‘saffron flower’.

It has been grown and used for over 4000 years. The first reference to saffron dates back to ‘Assyrian botanical’ writings from the 7th century BC in the time of Ashurbanipal. Researchers and scientists have found other documents proving that saffron flower has long been used for therapeutic purposes. Saffron gradually spread to Eurasia, North America, Oceania and North Africa.

CULTIVATION METHOD

Saffron pistils grow in light, clay soils, in a hot and sunny climate. Saffron blooms from late September to early November. It is harvested during blooming, before sunrise.

Saffron pistils are a deep red colour, with a rich aroma and an exceptional taste. They are carefully handpicked and gently dried.

This painstaking and delicate work ensures saffron has long, whole filaments, a bright colour and a subtle and refined flavour.

HOW TO USE IT WHEN COOKING

Genuine ‘red gold’, saffron acts as a natural flavour enhancer that rises above other flavours.

In cooking, saffron pistils or saffron powder are key ingredients in bouillabaisse, fish soup and even risotto. Saffron should be added after cooking to preserve its rare and unique flavour. Using saffron powder allows a more precise amount to be added.

Our saffron is 100% natural and comes from the regions of the East most famous for the quality of their crops. Saffron must be stored in a dry place to preserve its taste and fragrance for as long as possible.

Every three years, our farmers leave the farmland fallow so that, as it grows back over 2 years, it produces saffron with a deep red colour, a rich aroma and an exceptional taste. The Crocus Sativus flower is harvested before sunrise. Then the precious pistils are carefully picked by hand and gently dried. This painstaking and delicate work ensures Spigol saffron has long, whole filaments, a bright colour and a subtle, refined flavour.
