ORIGIN

All chilli peppers, whether mild or hot, belong to the same family as tomatoes and aubergines: Solanaceae. Chilli is a plant originating from the southern United States and Mexico.

Both mild and hot chilli peppers are known to have been eaten by man for over 9,500 years. Chilli was also one of the first plants to be grown in America. Traces of chillies dating back over 6,000 years were discovered during an archaeological dig in the south-west region of Ecuador.

It was imported to Europe by Christopher Columbus in the 16th century, along with many other spices. It was first sold in Asia, especially India, thanks to the Portuguese.

CULTIVATION METHOD

The plant that produces red chillies can grow to between 30cm and 1.5m. It grows in nutrient- and humus-rich soils, in sunny and relatively hot areas. Chilli can only grow properly in a tropical climate.

Its blooming and harvesting can vary according to the country of production. The chilli plant usually blooms between June and August and is harvested from July to October. Chilli peppers are harvested ripe when they turn red.

HOW TO USE IT WHEN COOKING

Red chilli contains flavonoids including capsaicin, which gives it a hot and spicy flavour. One of the unique features of hot chilli peppers is the large amount of capsaicin they contain compared to mild chilli peppers, which is why they have a more intense flavour.

The hot chilli pepper is a fruit almost always used finely crushed or in powder form. It is widely used in Spanish cuisine. Chilli powder is used to make sauces and stews and to enhance the flavour of cold meats.

Tip: Capsaicin, the substance contained in chilli peppers that gives them their spicy flavour, is soluble in fats but not in water. So have a glass of milk instead of a glass of water to reduce inflammation.
