ORIGIN

As well as its scientific name Capsicum Annum, paprika is also known as ‘mild paprika’ and belongs to the Solanaceae family.

Paprika was discovered by Latin American settlers. It was then introduced to Europe by Christopher Columbus in the 16th century. Nowadays, it is a symbol of Hungarian cuisine, which associates this spice with virility.

CULTIVATION METHOD

Mild paprika is usually grown in nutrient- and humus-rich soils, in areas with good exposure to sunlight.

Harvesting is staggered because the fruit does not ripen at the same time. The best-known spice, paprika powder, known for its bright red colour, is obtained from the dried, ripe and ground fruit.

HOW TO USE IT WHEN COOKING

It has a delicate aroma and flavour popular in tropical countries, mainly in Asia, that subtly enhances the flavour of dishes. Paprika powder is mainly used in Hungarian cuisine to make goulash (Hungarian onion-based dish), poultry dishes and sauces. It is also widely used in Spanish and North African cuisine.

Its subtle flavour makes it particularly suitable for use in goulash, poultry dishes and sauces. Mild paprika goes perfectly with cumin, cinnamon and ginger.

Tip: Do not caramelise paprika - this gives it an unpleasant taste and a pungent odour.
