ORIGIN

Cinnamon, scientific name Cinnamomum Verum, originates from south-west India, Sri Lanka and China. There are also cinnamon trees from the Cinnanmomum Zylanicum variety in Madagascar and the Bourbon islands. The first mention of cinnamon in China dates back almost 5,000 years. Indian and Chinese medicines were the first to use it. Cinnamon experienced strong growth in Europe from the 17th century thanks to the Portuguese, who imported the spice at that time.

Nowadays, it is more commonly known as ‘Sri Lankan cinnamon’ when it comes from Sri Lanka. Cinnamon is mainly used with turmeric, ginger, nutmeg, clove and cardamom.

CULTIVATION METHOD

The cinnamon tree can reach a height of 15m and grow best in deep, friable and humid soils. Cinnamon is the very thin, reddish-brown inner bark of the Sri Lankan cinnamon tree. Cinnamon sticks are therefore pieces of dried bark. The tree blooms from April to July.

Cinnamon is harvested twice a year at the end of the rainy season. Because of its sensitivity to temperatures below 15°C, the cinnamon tree is only found in tropical and subtropical regions.

HOW TO USE IT WHEN COOKING

Cinnamon has a sour yet very sweet taste. It is a key ingredient in South-East Asian cuisine and is also very popular in ground form in oriental cuisine (especially for pastries). Cinnamon powder flavours compotes, apple tarts and chocolate desserts as well as Moroccan tagines and pastillas. It can be used in both sweet and savoury dishes. Sri Lankan cinnamon is also used in exotic drink mixes.

Tips: Cinnamon powder can be used to garnish all your desserts. Both dry and fresh cinnamon should be stored out of direct sunlight in an airtight container.
